Best place with great selection
Looking for some tips on where to find different types of wood. Like the staves the guy in New Zealand uses that he chars himself or toasts. All I can find is already toasted stuff and nothing really exotic just the regular stuff. Or am I just not looking in the right places

You don't say where you're at but I recently found a local saw mill guy that sold me some air dried white oak and cherry, I planned on buying some maple but the cherry sidetracked me. I bought $100 worth to make it worth my trip but he would have dealt with 10 board ft at $3-4 / board ft depending on species. It's probably a lifetime supply for me.
Look for local sawmills on woodworking and homesteading sites. This guy's customers are usually woodworking types but he's a homesteader.

I was given a downed plumb tree and cut out the heartwood from it. Most fruit trees work if you can’t find white oak.

I didn't think about that angle, hang out with some guys that do tree work, it costs them to get rid of wood, if they can sell/trade it that's cost reduction.
If you have a chainsaw and a truck, drive around after a big windstorm and there's free wood + some cash everywhere available for a days hard work. You'll have to identify species yourself to tell which jobs you want.

Ah okay I was thinking more like an online supplier that specializes in it. I am up here near Frederick md there are lot of orchards around so those would be easy. I am wanting some like old rum barrels or sherry stuff like that
