Certainly a lot less Hassle, I'm sure it would make a Smooth sip of liquor.

I've got Hopi Blue Corn, Malted Hickory Cane Sweet Corn, Malted Blood Butcher, with Barley Malt Syrup, and Pure Cane Sugar for the Sweetener, and as I stated earlier, I use A Quality Yeast Energizer, Nutrient, Alpha and Beta Amylase, and a Yeast Blend. Consistency in sugar Conversion. I'm doing 55 Gallon Barrel Sets at a time though. Open Air Fermentation, daily Aeration.

Sounds like a good drop and you have some experience. Do the enzymes help with unfermentables typically found in beer recipes and the potential for puking many have reported when using DME/LME? I haven't messed with DME/LME yet but have done a bunch of large batch AG's which are a favorite 
Are you double distilling? Squeezing & clearing?
