My fermentation containers are 7.5 gallon plastic pails – same as used for wine making.
I want the results of three stripping runs combined to reach my still capacity for the spirit run.
I have a fermentation complete in one pail and would like to harvest the yeast and use it for two more pails of the same beer. Once I have three pails I should have enough for a spirit run.
My question is how to actually harvest the yeast since the fermentation was done on grain.
After the liquid has been siphoned off, I will need to squeeze the remainder. Do I just scoop up a ‘bunch’ of sediment from the bottom of the fermentation vessel and dump it into the ‘new’ pail to start the fermentation in the new pail?
How much of the bottom sediment should I use?
Am I asking the right questions?

Yes you are asking right question.
The three layers at the bottom of the pail are trub, yeast and left behind 'beer'
You want the yeast.
So add a bit of sterilized water swirl all together pour into a 2 litre jar and let separate.
Now carefully pour of thevtop layer - beer - then the yeast.
Keep refrigerated.
If needing it right sway. - scoop out 2 cups and go
Or dump it all across and go.
