This is a long read but totally worth it. And i think belongs with this thread. It’s everything about the production of diacetyl. Hope this helps at least someone

Re: Butter Rum
Just (finally!) distilled my first batch of this rum and it is great stuff! This was the perfect first rum recipe for me. Supermarket ingredients, no crazy scavenger hunts.
I didn't use dunder so I'm pretty close to the original recipe and instructions and like ShineOn I ran it as a one-and-done through 2 plates.
White and right off the spout this is a fantastic rum recipe! Not overwhelming, but some nice esters and a hint of funk, good character from the fermentables. Much more flavor than the mainstream commercial white rums! I'd drink this white and overproof no problem!
This was my first rum but it won't be my last. I'm about to kick off a second batch of the same with 25% dunder so I can see the difference. Most of the first batch will be aged with some oak to see how it is 'gold' but man, it doesn't need the oak or the age to be great!
Hope ShineOn is still around, I see he hasn't been active in a while, but thanks for the great recipe!

Re: Butter Rum
I have not followed much of the recipe other than the temperature, but the butter is very prominent. I was curious about the effects of other temperatures as well, so besides going to the specific temp for some hours, I try to spend as much time as possible in between, so heating up as slow as I possibly can. Takes ages, but tastes great so far!

Glad to hear you're still alive and at it. I feel that all too well with life getting in the way. All I can do is think about the hobby anymore. Take care man
