Can't go wrong with that mashbill Brewbob. I'm sippin some 9 month old 75/13/12 right now, and it's goings down like a fat kid on a see-saw

Golden graham malted barley with 272 chocolate malt and some rolled oats. YL yeast to get it all going. Ferment is smelling awsome!😋😋

Great minds think alike. UJ with flaked rye for a little spice and some chocolate malt.The spirit run tasted pretty good. (subtle chocolate notes)

175L of SSS and stripped another 80L.... trying to build up stocks of neutral so that I don't have to make any more for a few years.

I too, am very envious of that fermenter Bill!

I missed out on a big SS tank like that a few years ago when I couldn't arrange a van quick enough to get it picked up.

Running neutral myself today, hopefully will be enough stock from this run to last into next year.

Distilled 5 bottles of vodka,run some Odin’s Cornflakes Whisky, if it keeps raining today I’ll strip some SBB molasses rum

Started to strip my SBBs rum. I will be putting this batch aside for at least 2yrs. God please give me the strength. 🤣🍻

Started my very first rum spirit run this morning.

Got the boiler on for 30 mins until the top of the keg was hot, then turned it off again and went to the shops to get supplies for putting on a mash while I'm running.

Got home, boiler back on and setup the still.
I'm running a 30l rum wash, with around 18lts of already stripped rum wines added, so boiler is as full as I'll ever want it.

Decided to run with my Dimroth PC today as I don't need the efficiency of the Liebig when running so slow.

Yes I'm so happy it's finally spirit run time!
A mate has been given fistfuls of oak staves and he has soaked, caramelised, marinated and toasted with all sorts of goodies, so we'll be putting down lots of different samples to age

(Technically late last night, but close enough) I made the cuts on my first whiskey run using the keg and controller. For what’s mostly a sugarhead and feints run, I’m impressed by how much flavor it has, and how good it turned out. And I made enough to completely fill a BadMo, so some UJSSM that’s been in there for a couple years came out and into glass.

It’s a nice feeling, realizing that the bulk of what I reach for in the liquor cabinet these days is homemade.

Last night I did the spirit run of AG 75/12/13 low wines. Added 1 gallon of wash i saved from the stripping runs.

So far there is 2 gallons and 5 pints I'm keeping, might throw the next heads jar in if it calms down a little after another half day.

This was the first spirit run of the new grain bill and grain source. I have enough grains to run it 3 more times and I'm glad I bought so much, to me this has really nice grainy, doughy flavors. Might add a lb of oats to the next round.

Decided to proof 2.5 gallons to 55% and then add 2 american oak staves with a medium+ toast and #2 char per jar. I'll probably let them air for about a week before sealing up, then it's off to the likker dungeon to be forgotten about for a while.

Strippin’ and Sippin’ early on a Sunday Mornin’ !!!

This is my first of a series of UJ’s since I haven’t done those yet.

The helmet and tall riser allow me to foam up into the sightglass and hit it with almost full power right out of the gate on a full boiler charge.

5.5g low wines stripped this morning :) might be able to strip another today if I’m motivated ;)

Damn I love that copper milk can.
Hopefully, next weekend I can get my season started. I'm sitting the garage, running my laser engraver, and staring at the 300 pounds of grain I need to work through this winter and the BadMo barrels I need to fill.

Amazingly I managed to find the time for a spirit run today, so ran the toasted / raw barley YLAY low wines. Trying to decide if I'm still awake enough to do some tasting... I think I'll leave it for tomorrow.

i made a 100 lt wposw (about my 10th batch) in my shed yesterday. first time using red star dady.
i have 2 temp controllers one as a under the plastic drum is a heating pad and the other as a belly wrap(plant starter pad) both set at 28c. the wort is in a box with r20 insulation all covered and sealed. the shed was about 10c when i came out about 6am and last night outside temp was near -5c. and the wash in was at 33c
I know bakers yeast likes the heat but i dont know how the dady will like it. start sg 1.075 ph5.52 this morning 1.058 ph 3.22. It appears to be self heating.
How high can the temp go before the yeast are in trouble?

The smell is very nice!

Not sure about daddy but you should have a buffer of some kind. Shells or marble will help keep ph in check. A large wash will generate some heat on its own,so it'll need some monitoring.
Others with daddy experience may help out more.

Made cuts on my first ever all feints run yesterday and today. Really pleased with the product and quite surprised by the yield. 3 gallons of feints with about 3.5 gallons of fresh beer. Feints are from a 90:10 Corn:Oats whiskey and 2 CROW bourbon runs.

300 ml Fores, then 35 jars @ 300 ml each.

Kept 10 - 27, plus 33, 34, & 35 as sweet water to proof down. 1.7 gallons at 59%.

I thought I'd get a small hearts cut given that this was a feints run, but this was a wider cut than I made with any of the source runs. Really surprised. Maybe the age of the feints had something to do with it? First source run was 7 months ago, second was 1.5 months ago, and 3rd was a few weeks ago. I didn't taste the cloudy tails jars but the clear jars in the second half of the run were more grainy & slightly grungy with a sweet finish than tailsy. Not what I was expecting but I'll take it!

Nice summary, ckdistills. Excellent example of how to recover (and extend) the fringes from prior runs. Did you happen to measure the ABV of the 3gal of feints before you added the fresh beer?

Thanks! Yea, feints were 59% before adding fresh beer. Combined it was about 29% going into the boiler. I did keep the feints in a combination of 1 gallon jugs and 1/2 gallon mason jars before combining in a 3 gallon glass carboy for the last month or so. So it all aged at different proofs.

Oh and this is on a pot still. Just started to make a sugar head on the spent grain from all grain mashes and saving those feints separately for a neutral run. Tossed jars 4-9 and 28-32 in with that too.

uh.... duh! (I missed the first 59%)

I believe beer, low wines, feints benefit some from a rest before running so you got a nice little stash of aging stock happenin'.
