I'm setting up for a large spirit run that I'm doing today. I wanted to have plenty of jars on hand so I went and grabbed more from the basement and found this.
The extra 2.5 years seems to have made a difference even though it was in glass. It is so smooth and I'm picking up some new flavors unless I just forgot what this tasted like.
I decided to experiment a little with this instead of proofing and most likely drinking it all this weekend. I added 5 medium toast french oak chips and maybe 1/2 tsp of rum vanilla extract. It smells and tastes great right now but I'm going to leave the bottle outside for a week before tasting again. I want to see what the oak will do for it as I normally drink my rum white.
A 5yo bottle of 60abv rum. I think it was just the left overs when I bottled that run. It was a nice rum when proofed to 40abv, thought we drank the last bottle 2 years ago camping. Found 5y Old Rum

A week won’t do much. You might get a little “blush” to the color. But it won’t change the flavor perceivably.

I would get it off the wood before it goes nasty for a year or two. Enjoy it as it is and make a new batch to put on wood.
