Ok, I was a bit short winded in the first introduction and got shut down. I’ll try my hand again.

From the piedmont area of NC.

Came across this site while searching for “grappa”. Incredibly impressed with the vault of information on here. I like the peer reviewed nature of an informal forum exchange. Lots of ideas and opinions, lots of science and fact, lots of experience passed down through generations.

So back to grappa. I keep bees and have been making mead. I also have a really good source for southern grapes-muscadinea, and so have played some with honey backed grape wines and fortified wines. Muscadine wine tends to be on the acidic side, hence all of the over sweetened swill they sell at the store. You can’t seem to find a nice color and flavor, except if you do it at home :D I thought trying to make a port with some homemade brandy or grappa would be worth a try.

Anyway just been reading up on safety of course and process, aging and all the million interesting things compiled here.

Any bee keepers or muscadine enthusiasts out there?
