Hi all,
Just wanted to share an idea I had. I made some 100% Molasses rum and had some clean dunder left over. I decided to use it as the base for a teriyaki marinade and it turned out fantastic. I'd recommend it.
My reasoning is that dunder is very savory and it's acidic. Teriyaki, in my opinion, can never have too much umami and marinades should have an acidic component so I thought it would work great. I also added:
-Garlic
-Sesame oil
-Sherry
-Ginger
-Soy sauce
-Maybe some other stuff I don't remember
And after about 36 hours, I grilled the chicken thighs over a camp fire. Came out fantastic. You should try it!

Hey that's an innovative idea Dokimos, I like it!
I think I'm gonna try this with some other foods and see if anything stands out.
My first thought is a slow cooked pork joint. I worked with a Portuguese lady who gave me her recipe for slow cooked pork in beer, this might be magic!

Thanks for the feedback, let me know how it goes! I like the idea of using dunder because it has the savoriness of soy sauce and the molasses flavor of molasses without adding too much saltiness or sweetness, respectively. Cheers!

Hope you add some hot peppers and garlic too! Maybe also a little straight molasses for some sweet burn and to balance any acidity..
Plate and serve with a rum flambè for the finishing touch
