when mash is visibly active but reading 1.0 on hydrometer

I have a 30 gallon corn mash reading 1.0 adjusted to the temp of 80 degrees (1.001) that is still bubbling vigourously. It tastes dry and deliscious. I have a little video clip....see below.
I siphoned off 7 gallons and its heating in the still but is there more sugar to be converted or is this just co2? I feel like I should trust my hydrometer and taste buds. I have made many all grain mashes, this is my first 100% corn....it was cracked corn btw, not further milled. I used HT enzymes at 190 and then GL at 140. Its been 7 days. Whaddya think??

If it's still fermenting away I'd leave it alone, unless you have to/ want to run it now.

Looks like it's about done, reckon a day or two left max.

Actually, do you ferment on the grain?
Could be that the enzymes are still working on the corn so may keep going for a while yet

yes, its on the grain. No hurry, I will see how the first 6 gallons produce and let the rest set a spell

update, from my 5.5 gallon strip, I got 1.25 gallons final abv of 40%....so I would say those bubbles must have been Co2. I am happy with that yeild!

I think I am happy with this result....does it sound as expected?

From 26 gallons water/backset and 58 lbs grain....mostly corn but also 10 lbs peated malt barley (cause thats what I had...) I got 15 gallons to strip (10 clear and 5 pressed) with OG of 1.06 and FG of 1.0 so about 6% ABV. After stripping I got 3 gallons at 40% average. I used both HT and Amalayze liquid enzymes.

Is my thinking correct??

Should be around 7.75% abv

26 gallons of 7 to 7.75% should get you around 7 gallons or more of 30% low wines. Dig deeper into your stripping runs. I think you're leaving flavor (and booze) in the boiler. My 23 gallon ferments with 50# of grain net me 5 to 5.5 gallons of low wines at 30%. My mashes average 8% finished.
