The Mash
maple syrup watered down to 1.09 sg add Nutes and some oyster shells pitch Dady Works every time ...till now
I fermented a big batch 170l (a buddy gives me whats left in his arch at the end of the year)
Pitched Dady it fermented like crazy for about 4 days i kept the temp at 83f
then got stuck at 1.03 Ph shows on my strips as a 5
it tastes almost sour( perhaps just a bit of vinegar flavor) i get no sugar flavor
pulled a few jars to try different things added nutes and yeast in one no joy
I added just Yeast no Joy
I added a little lemon juice no joy
I tried running it and it foams like crazy almost to the point on un strippable.
any suggestions?

The spirit will clean things up if it puked. Did you add some oil of some kind. Some say butter while stripping. Very slow heatup let sit for a while then heat again.
I drink so much now,on the back of my license it's a list of organs I need.

Sounds like it’s done if it’s not sweet.
Could the issue be that this batch is high in non fermentable sugars?
Some Maple syrups only have around 65% fermentables, which would put your 1090 OG - 1030 FG in the ballpark.
+1 - That or an anti foam like fermcap AT would be my 1st go to.
You could also try a bit of Glucoamylase to see if that makes any difference to the fermentation.
