Sunday may 26 2024 got the news my dad had passed away
And I was in middle of spirit run on a sugar wash
So had 40# cracked corn that I had ground to #3 course ground meal
So in his honor since he was a turkey 101 fan most of my life I decide to do a hybrid sour mash type dont know to be honest
40# course ground meal
12# white sugar
40 oz honey
18 gallons water
4 gallons of sugar head back set
Soaked corn and sugar in the 18 gallons water
Added back set at end of run super hot
All into a 30 gallon fermenter
Let sit till today June 3 2024 did my stripping runs 3x @ 8 gals apiece
Low wines gathered at 7.5
Add .5 low wine backset
Ran slow and low deep into the tails
2 gallons hearts was end result
Tempered down to 120 and now got 1 jar sitting on oak stave #3
Anyways yall let me know if this is considered a sour mash or just another hair brain idea
Either way it did turn out good and eases the pain a smidge

Sorry to hear about your loss mate. Losing your old man is a hard thing to bear.
As for the whiskey, well, there's back set in there, so I reckon it's fair game to call it a sour mash.

My aunt requested I save a jar for her so between that and some friends of his ill be making a batch each year
Lol hardest part is gonna be letting it age
He used to laugh when he moved to Alabama and me and my friends would be passing a jar around he have a snort or 2 than say nope going back to my bud
Ill miss him but he always encouraged me in doing this

Sorry for your loss.
Lost mine about two years ago now.
I still get sad sometimes.
But not as much as before.
So it does get easier over time.

came out surprisingly smooth for 120' was pleasantly surprised but gonna age on oak till this time next year see what happens
