You could very well be onto something there tommy.
Pineapple and rum is a favourite pairing and that has probably the most butyrate of all the fruits.

I did a Google around after you said it's added to OJs and found this interesting passage, note how it's commercially produced:-

"Ethyl Butyrate is an ester, also commonly known as Ethyl Butanoate and Butyric Ether. Although it can be found in trace amounts in various fruits, it is commercially synthesized through a condensation reaction, by reacting ethanol and butyric acid.

This flavoursome ester is very popular for use as a flavouring agent in orange juices, alcoholic cocktails and beers, and other applications in the food and beverages sector. It is a colourless liquid and has a fruity, banana, orange, or pineapple like flavour and scent. This makes it a popular choice as a solvent in perfumes too. In the industrial sector, Ethyl Butyrate is also used as a surfactant and emulsifier"

Out of interest , Butyric acid is quite possibly the most vial stuff I have ever smelt. .You know the smell of Vomit (chuck) , well imagine concentrating that a thousand fold . It really is disgusting stuff .
Just a few drops go down the sink and you are near on puking every time you have to go near the sink for days afterwards .

I really don’t see the attraction in it myself . And as I have such a sensitive nose to it , I can honestly say I have never smelt that shit in any of the SBB Rum I have made over the years . ….. nor any pineapple .

Iff’n you want some pineapple Rum , you could could try sticking your fingers down your throat and directing into boiler before you run the still :shock:

Ethyl butyrate is far less nasty though, honestly.

I know very well what the concentrated smell of Butyric acid is like. It's truly, truly evil.
I actually add the stuff to fishing bait. Cyprinids are strongly attracted to organic acids and this one in particular!

Funny story about N Butyric.
One of my fishing mates found out his wife was messing around in her car with a guy after work, so he poured it into her air inlet grilles at the start of her shift. :D

Get over it already. The ester smells very different to the acid. Use that to your advantage.

Spirit run of SBB rum. All done and ready for cuts tomorrow. Should net me a few good litres all said and done.

Will revert to your posts and look for the honey you were fermenting Tater way back in 2007. That is my ultimate goal at this moment since i keep bees.

I’m doin a twin strip of SBB’s rum. Realized i dont even have to disconnect the rc, just dismantle and let the cooling water exit right through it.

I finally made my port style mead.

I made 1.5 gallons of 60% honeyshine.

Then, a while later, we had another baby, and some more time later, I started a mead fermentation.

2 gallons of honey, water to 1.14 about 6 gallons total
15g 71b yeast,
25grams go ferm,
35 grams fermaid o.

Let it ferment down to 1.05, then added the honeyshine.

It should be around 21% abv.

I just put 6 gallons of it in to a carboy with 3oz American heavy toast American oak cubes and hit it in the back of the closet.

Hopefully it doesn't suck.

So after 2 weeks of bottle conditioning, I cracked one open today. It's not bad. Not as developed as I'd have hoped. The orange has faded quite a lot, but the coriander is nicely balanced. Any more and it would be too much. The body's a little lacking, but I think that's a combination of the low abv (~4.2%) and a low mash temp which may have resulted in fewer non-fermentables. The colour is nice, with the right amount of haze and a good head. It's refreshing. Not too cloying, although I might take the hops down a smidge in favour of a little more orange. I wonder if the dried peel wasn't enough, I think the recipe called for fresh. Remains to be seen what happens over the next couple of weeks.

Proofed up and sweetened a french oak/ bourbon barrel chip / chocolate raspberry / blended wine tawny port bulk aged mostly in a carboy for five years under vacuum - solera style, taking some off and adding a blend of each seasons wines. Filled a neutral badmo and three more 750’s. I think it’ll do something good for the badmo and whatever goes in next :) nice complex dessert wine with a little kick. No idea what the proof is because as i’ve added wine i’ve also proofed up with high proof brandy or grappa. I’m expecting the angels to take their share now whilst in the badmo and concentrate down slightly.

Nice to hear Normandy. I never posted,but a while back I made some spruce beer. I primed the bottles and on the weekend we cracked a few while family was here. It's also very interesting. Taste is actually not bad,but has a fart smell,so I guess if you drink it with your nose plugged it's fine. 🤣

SBB spirit run today with 1g of feints added from the last run.
Nice slow warm up and I'm just into hearts now.

Whist the still is running, I'm putting 2x 20l batches of wine on, from mixed random fruits and juices that I've saved up and frozen over a few weeks, along with the pulp from my last hedgerow red.

And the water from the condenser is running hot into a 10g bucket to set up a YLAY mash.
Flaked maize, groats and a kilo of unwanted pasta sheets bashed into flakes. Why not right!? :lol:

Dropped 40 gallons of HBB last weekend. It is still bubbling away nicely. I think it will be done tomorrow or Monday.

I haven’t made bourbon in a while due to some space issues. I love how easy and consistent this process is.

My whole garage smells awesome.
I've stopped fighting my inner demons. We are on the same side now.

Added some SBB rum feints to a UJSSM wash for a strip run last night. Ran the resulting 20L of 35% low wines in a spirit run this morning. Will do cuts and blend tomorrow, but tasting off the spout was very promising. I quite like the corn and rum combo.

Sounds interesting. I still gotta get around to trying that grain molasses combo. There's a great post here about it somewhere. My feed store sells the bags already mixed. Just to dam many recipes to try 🍻

Yea. I’ve been mixing the rum and whiskey in my drinking bottle. Figured I’d see what happens if a skip a step and just give it a hint of rum.
