I've been distilling for around 15 years and my preference is rum as I was born in Bundaberg. I make clear spirit and flavour it. The flavouring I use appears to contain mostly caramelised sugar. I'd like to have a go at making my own flavouring but don't know where to start. I use an Essencia still and generally get around 4.7 litres of 90% abv.
