This is new to me, but perhaps familiar to others.

It's a yeast and enzyme combo they've introduced relatively recently. Not your all-in-one Yellow Angel Yeast, but rather it contains glucoamylase to dry out the final product during fermentation. So you'd follow your normal process, and pitch this as you would whatever other yeast you use.

Probably just as easy to use whatever yeast you use, and add some glucoamylase separately, but could be convenient if the yeast itself is desirable.

Yes should not be seen as alternate to Yellow Label ... you are still going to need to gelatinize corn or other grains and get most of your conversion from malted grain, just would be able to skip the glucoamylase needed at the end in order to get a typical beer yeast to reach final gravity below 1.000.

I've brewed quite a few beer batches of low carb "Brut IPA" that combined a "light body" mash profile with a dose of glucoamylase in the fermentor (added at same time as the yeast) and can see the convenience of not needing to source gluco or figure out proper dose for the gluco I sourced...Probably the exact dose was not as important as I thought at the time but I'd have tried this if it was available.
