Good day - beautiful stripping run

Hiya guys.

Stockholm is getting the first signs of spring, temperatures just above 10C, clear blue skies and that yellow thing we read about. But the morning was dedicated to distilling chores, Panela rum stripping run, 24 liters waiting to be concentrated.

As of late I've been having some bad days. The first boiler was leaking, but the supplier sent me a new one, which doesn't leak (knock on wood). I had leaks all over the place, I've spent days in the hardware store getting connections and teflon tape. My sugar washes were awful, stopping at 1.035, until I realized my PH was way too low. Glad I still have some calcium carbonate from my brewing days. But when you fail with sugar washes you feel like a big proper dummy. Well, I do.

But today all went smooth sailing. The ferment ended where I wanted and my stripping run of said ferment went on the dot of what I was planning. Almost full power through out the run, 7.2cl/min, the run was done in 2 hours and 20 minutes, 24L. And I got 7L low wines @ 29%abv, which was just what I had been planning. You know the feeling of relief and joy when things just fall into place. I needed that.

Now I just need to get the next gen loaded up for fermentation and stripping run next weekend (if my luck holds).

Always good when a plan comes together. :)

Yes spring is just starting to peak out here in the US as well.
Sometimes those sugar washes are the hardest to keep going, even though they seem so simple. (Like you discovered this time a simple PH adjustment did the trick)
