Questions.
Made a rum and a whiskey, not so great ! Will it improve if left in jar for a while ? Kinda mellow out ?
Do I allow for mellowing out lid on or lid off ?
When macerating botanicals, lid on or off ?
When aging on wood lid on or lid off ?
When the wife sais " do as you pleas", does it mean do as you please or is it a trick ?

ITS A TRICK
you should let it sit with a coffee filter or paper towel over it for a day or so after you distill, I've heard of 5 days. It let's the volitiles air out and mellow it down a bit. For maceration and oaking, that's usually with a closed lid after it airs out.

After cuts and blending, dilute to your prefered aging strength, and an appropriate amount of wood and close the lid. Leave some headroom for oxygen contact.
Ive never found my rum to be really good right away. But once its set on oak for a few months (at least 3 in my opinion) it rounds out and becomes quite good. With whiskey, good cuts are a big help. Tight cuts to get something light and drinkable white, and wider cuts to put away for aging.
I definitely wouldn't leave any jars open for an extended length of time.

Airing is good if making neutral as it lets esters evaporate.
Doing that to a rum or whiskey doesn’t happen in my shed.

I agree, it’s definitely a trick. Like when she says everything is “fine.”
I air my new make overnite under a filter then do cuts. The good stuff goes in large jars, 3/4 full with oak and a tight lid. I open them briefly every 3 months or so, close ‘em, give ‘em a little shake and walk away.

Macerating is to capture flavor, so don’t let it escape before you even put it in the still.

Left in a jar, with some air space the booze will continue to mellow out.
