Unusual grains in a Bourbon

Hiya grain distillers. I wanted to bounce an idea off you.

I was checking a video a few months ago about what grains are allowed in a Bourbon and there were a number of grains there that I hardly had heard of. It was intriguing and planted a seed. Now that I am prepping for my first YLAY experience, I thought that maybe an interesting project would be to make a Bourbon which main flavor ingredient would be one of these "odd" grains. I am thinking 70% corn, 15% Barley malt, and 15% <unusual grain>. I am thinking the percentage is enough for the unusual grain to make their presence, but without totally ruining the taste if it's only so-so. What do you think?

Unusual grains list
- Spelt
- Buckwheat
- Triticale
- Millet
- Teff
- Amaranth (added)
(feel free to add grain if I've missed one)

I was planning to put Sorghum on the list too but I've seen some pretty nasty remarks about its' flavor, and if someone else already stepped on that landmine why would I be following in their footsteps?

What about the grains I've listed, have you already tried it in a Whiskey? What was your experience? Some of these are already on the market by others. Did you try - what did you think?
