Now I’m changing it up. I was gifted an 8-gallon Brewzilla 3.0 so I’m switching my entire setup. I’m getting the distiller lid with the 2” tri-clamp fitting. I’m going to go with the setup in the attached image. I’m going to start with just the basic setup by removing the reflux condenser. I will be using the Brewzilla for both mashing and distilling and the conical fermenter for, well, fermenting. How much packing should I use in the column? I’m not a noob when it comes to brewing beer, but I’ve never distilled anything.

If you are removing the reflux condenser you don't need packing in the column/riser. But, since it is all stainless steel system I would recommend some copper of some type. An easy way to do that is a few inches of copper mesh in the vapor path.

I suspect he's talking about using some copper mesh in the riser due to the lack of copper throughout the entire still.

You can use 2 or 3 rolls of copper mesh inside of the riser. You can also (or instead) put some pieces of copper inside of the boiler.

Yes, column packing is generally referred to for reflux distilling, as when you’re using a reflux condenser/dephlegmator. Without cooling the column, packing the column to promote reflux is pretty pointless.

However, the lack of copper in your SS still can be rectified with copper mesh, stuck up the column inside. I am not sure if this is the reason why you asked, but copper in your vapor path will significantly improve the flavor in your spirits. I would stuff as much copper mesh as I could fit in your SS spool if I were you. As long as it’s not blocking the vapor path, you’re good. Always test if you can blow air through the pipe before you mount it so you dont end up with a serious accident.
