Lactose Fermenting Yeasts??

I know they exist but they are hard to find..
Anybody have a clue where I can get some.

sorry bout all the questions recently, but I am experimenting with many different things. And fermented milk seems nifty I've had it before not a very strong drink but it was good

You have to get a slant or a freeze dried sample from a microbe library like the American Type Culture Collection http://www.atcc.org" onclick="window.open(this.href);return false;" rel="nofollow and culture it up into a usable amount yourself.
In order to get them to send you anything you need to be able to present yourself as someone with a professional or academic biology laboratory.

The yeast you are looking for is alternately called Kluyveromyces marxianus or Candida Kefyr.

There are dozens of strains all with different behaviors... some of them efficently turn whey into ethanol.. others produce large amounts of enzymes still others are best suited to causing skin infections.

Does this mean it breaks down lactose into a fermentable form of sugar???

after looking through so many forms of yeast I think I found what I want

ferments lactose [lactin] [58473]
ferments whey [45922]
produces ethyl alcohol [ethanol] [45922] [57351] [58473]

It is Candida kefyr or Kluyveromyces marxianus

wow thats alot of action in that there yeast

and alot of them have great medicinal properties
