Hogs are everywhere in the south now a days... I hunt mostly in Louisiana..but do a bit in Alabama and in Texas also... and every place I go seems to have hogs... they can be a pain in the ass for landowners (mostly farmers) cause they tear everything up...but they are just fine in any of my cookin devices!!! ![Thumbup :thumbup:](./images/smilies/icon_thumbup.gif)

A buddy of mine gave me a wild hog shoulder. I brined it a couple of days, and rubbed it with paprika, brown sugar, and sugar in the raw after that. Tonight, I threw it on the smoker and spritzed it every 30 mins with white wine and some unaged bourbon I had kickin around. When done, I pulled it, soaked it in root beer inside a dutch oven and threw it back in the smoker for another 45 mins. Man was it killer. Also smoked a venison roast with the same rub---that weren't so bad either.

Best damn hams I have ever made came from 2 hogs( razor backs) I shot with a bow, 1 was 280lbs the other 298lbs!
Made hams out of all 4 hind qtrs, ummm ummmm good, the fella who's property we were hunting freaked out once we had them hung and the wife took at them hogs with a skinin knife, 40 minutes later both hides on the ground, he said damn boy can she shoot, ya better behave! ( yes she can shoot)
I will post pic of 1, I had both shoulder mounted one is in the sport shop in town the other here at the house!

Heres one ,we were hunting 1st week of January usually cold it warmed up that day to about 80 degrees these bad boys came out on the warm dirt rd , 3 of them 2 males 1 female . they were tangled up together fighting for a mate . all 3 were intertwined with the heads up about 30" of the ground .. 22 cal pistol a few shots to the head each . 1 was able to get away ,the head on the big one was as big as my fist.. back at camp 4 hrs later if you picked them up they would still wrap around your arm...I think there were 13 rings on the big ones tail

My brother and his Friends come down from NY for a meat hunt ,they bring a trailer and a butcher .they come the last week of the season ,we hunt a ranch 1 hr south of San Antonio no fence has a couple 10,000 acre pastures. they usually haul back 12 deer 14 hogs... They didn't come last year because of the drought... The year before they shot some 170 bucks. I hunt the hogs lotta fun ,they come in quick and don't stand around

That's awesome Vinper, I work on a lot of those big badass ranches doing oilfield work. I've seen some BIG bucks, but even with all the time I've spent down there I haven't found the big rattler

Man the last thing I would want to encounter when out in the wilderness would be a poisonous snake! The only thing in the Ontario wilderness that could take my life would be a large black bear and in twenty years of hunting moose and whitetail deer I have never crossed paths with one.

We've got venomous snakes and bears in my neck of the woods.... I've seen a rattler or two but mostly the beautiful southern copperhead.... Definitely more worried about the black bears though....

We lost a deer at dusk the day before 2 guys went in the brush tracking it . while crawling through the thicket a rattled sounded off like 3 feet from them , they got out of there quick... I'm not afraid of snakes cacth them all the time , so i was teasing them . But Ive never seen a rattler, The next next day when these came in I was like wholly shit . New respect . they tell you dont go in the thicket .ever thing in there either stings, bites or sticks you .... found that deer the next day coyotes had ate most of it ,just took the cape.

I enjoy popping them yotes too.... Our rattlers tend to run but the copperheads will stand their ground....
