Hi just getten around to maken a batch of the original SPD. Have poured off the week old alcohol off of the strawberries,. 55% oaked sweetfeed and re-covered the berries with sugar. It has has been on there for a week. How long a sugar/ berries soak? I read till the sugar disappears but I dont think its all going to melt to syrup as everyone else's seems to,.. I do have about an inch in each qt mason jar of sugar on the bottom. This is seven days of sugar soak. The berries themselves have shrunk 50% in volume and it looks like about a pint of syrup to pour off.
Did I put too much sugar in to cover the berries? I covered them with sugar and settled it in a bit then covered a second time. Too much?
Should I just pour off the syrup and re cover with sugar and not worry?
Three times? Has this been everyones experience?

With my mulberrys I had to keep pouring off the syrup from the top. Then it would make some more syrup. I would pour off the syrup you do have. And then shake it up good and get it all coated in the sugar that is left in there. This should pull out more.

Thanks Mr P. I will do exactly that. I must have put to much sugar in.
Howd the Mullberries taste? I have a huge fruiting tree that if I protect from the birds would produce plenty of berries. They do taste good as I try to eat as many as I can before the birds feast. Did the mullberry taste come through as well as these strawbery PD seem to?

Yes it did. It's not bad. It tastes a little green. It would be better with only using the most ripe berries you can get. But my mulberry wine is coming along very nicely. I would recommend it. Search mulberry. I have a thread on it.

Interesting that you say "green".

I really enjoy'd my SPD batches....So much so that I used strawberries in the thumper charge once upon a time...Man did that come over green as hell. Never again.

I thought I got all the stems out. But I found a few left in there. I think that had a little to do with it. That and some of them were not completely ripe. But I still need to filter it one more time and dilute it a little.

First off this board has been an amazing learning tool. Ive made the plain'ol sugar wash and sweet feed wash and used it to make a few things.. the favorite so far has been Thai Terror, 2 bottles gone in 1 night. (wife is picking up the ingredients to make more right now)

I just started a panty dropper batch using some prickly pears and wild plums that have been in the freezer since I picked them a couple months ago.
1 jar just prickly pear, 1 jar half prickly pear and half plums, 1 jar just plums.

Ill update once they are finished.

Enjoying my first glass of finished strawberry right now. Its AMAZING!

I made peach as well, and small tastings have shown it to be even tastier then the strawberry.


Unfortunately, my lady is suffering a gall bladder thing at the moment, and isn't able to partake in the panty dropper tasting.

Fortunately we're still new in the relationship stage, so the pantys will drop without alcohol. :silent:

I am completing my batch of SPD and I have run into a confounding problem. Where'd the alcohol go? I poured off the alcohol (originally 55%abv) from the soaking strawberries and took a reading of 5%abv from one jar and 7%abv from the other. I understand the alcohol displaced the water in the berries but does this mean the alcohol content from the ensuing syrup is where the alcohol now resides? I figured a 50% reduction in % since the berries are almost all water, but not a 90% reduction. How do you guys effectively judge the proof of the resulting SPD? I have not added the sweet sugary syrup from the soaking strawberries yet.
Should I have started with 80% or 90% abv?

Your hydrometer accurately measures pure water and ethanol.

Once mixed with the fruit/ fruit juice, it can no longer accurately measure the alcohol content.

This was covered pretty early on in the thread.




Btw, thinking of doing a KIWI/ STRAWBERRY mix. Half and half. My favorite soda pop as a kid was kiwi strawberry and hopefully this will replicate the taste. We'll know in a little over a week i figure.


Also, i ran some peach for the girlfriend. It produced more syrup faster then the strawberry. I shouldn't have added all the syrup, it tastes great but the alcohol content just isn't there like the strawberry. But she likes it, so WORKS FOR ME!!!

Also, FWIW I used the cheapest store bought vodka I could find ($11.54 / half gallon). 40% ABV. I didn't dilute at all, its a pleasurable drink with no alcohol taste (but definitely has the alcohol effect)

Thanks SN, I read this thread through 2- 3 times and cant believe I missed SuperDaves exact question,.. geez.
There are well over 240 posts in this one thread,. and each one of these threads is a learning course,...and how many threads are actually on here? I love this place :clap:

Like the idea of Kiwis, they grow here where I live. I think Kiwis would b a great addition to temper or actually add to the strawberry taste. I mixed some SPD with lemonade and this was smack-dab refreshing. Its was 84 degrees here a day or two ago.

I don't know much about drinkology but will fresh lemon juice keep for awhile in SPD, tightly capped? Like for a Christmas present?

I believe the concensus is the SPD will last for a couple of months, due to the alchohol.

Did you say 84 degrees F? It's 35 here right now.. I hate you! Haha.

Going to buy some kiwis, strawberrys, pineapples, cherries, and maybe some more peaches all tonight. Next weekend should be fun :D

strawberry panty dropper sounded so good that i had to started a batch,
handpicked frozen berries were used along with some spirits that was distilled from wine,
the wine was rejects from a neighbor's hobby, cider to,
everything got mixed together and run twice through the pot,
heads to tails all mixed as one,
so the flavour is questionable,

so after a week of soaking the strawberries have settled in the spirits nicely,
and if you eat a berry the questionable flavour that was in the spirts is now in the strawberry,
the strawberries are acting like a charcoal filtering agent and is doing and exchange,

should these questionable berries be used to make liquid sugar?
is the sugar now going to extract the questionable taste back from the strawberry?
maybe i should throw away the old starwberries and do another soaking for a week with another new batch of strawberries?
has anyone else noticed this?

Has anyone experimented with pectic enzyme to clear up what doesn't go away with straining? Thinking about trying a pinch of it before adding syrup.

wow,
what a nice smooth tasting spirit with out adding any sugar,
turned a questional tasting spirit into a hit,
the berries did act like a filter on the heads and tails and exchanged them with a wonderful strawberries essence and flavour,
and the spirit still contains its origin,
no sugar is getting added to this jar,
neat martini's all the way

I don't fully understand that part of the instructions. Does it mean pour in enough sugar to fill in all the gaps in the jar between the strawberries? Or does it mean just enough to coat each strawberry? Or does it mean just a pile on top to make a "cover".

I have my strawberries happily marinating in 80 proof at the moment and will need to move to the sugar step in a few days times.

I would really appreciate it if somebody could help me understand this.
She's only a whisky maker but I love her still.

When I did this recipe I soaked the strawberries first and when done, made a sugar syrup.
Added this after removing the strawberries until it was to my liking.

The strawberries acted as a filter and smoothed out the booze in mine too.

This is the most requested spirit from my friends. I use wineos wash to soak the strawberries and then dilute from 80 proof down at people's request. Also, adjust syrup to preference. Can't beat that

It will work in anything that will take flavor. With that said, I only mix it with neutrals but have done it with uncle Jessie's but only when I ran slow and produced a near neutral. I would suggest you try making a small batch, maybe a pint and if you like it......that's all that matters

Just strained out my strawberrys and put my sugar. Too bad my gerber nute has a little bit o heads in it. We shall have to cover that up with syrup, coke and ice and take two in the morning. Next time I will cut tighter!

Going to make a couple of 3ltr jars this weekend, the only question I have is after the initial soak and drain off it says to add sugar to cover most of the fruit, now I don't want to sound stupid but using a jar do I need to remove all the fruit to insure all the fruit is covered and then return them back in to the jar, or just pour sugar in to the top of the jar only covering just the strawberry's on the top of the jar.

Can add the sugar put the top upon the jar and give a lil spin.....Then remove lid and top off sugar.....

I usually fill with sugar and after a week, I take the syrup out, add to spirits, then add more sugar. I get two batches of syrup this way and adjust proff and sweetness to taste

When you say fill with sugar do you leave the fruit in the jar and get as much as you can in the jar or lightly cover nad shake it down to the bottom if you understand what I mean, I would hate to have either too little or too much sugar, my way of thing was to remove the fruit roll it in some sugar and then replace back in the jar :D

I pour out the alcohol and then pour sugar over it until all the fruit is covered. I shake it up everyday and when it form syrup, I pour it off and repeat
