I have used one for brewing for years. I drilled a hole in the lid to accept a rubber grommet that the aquarium heater will slide neatly into. This leaves the controls and wireing outside and the glass tube inside the fermenter. Never heard of or seen a problem with this type of fix. As long as a sufficient length of the heater is submerged otherwise it can overheat.

i had good result with 3 carboy 2 with heaters and one in the middle,
all 3 wrapped together with thick towels even when room temp is about 17celcius .

gets really cold here during winter :/

have to had that i was only doing wine from kits before, but for keeping temp its pretty much the same thing, maybe even easyer with fast ferminting mash since they produce some heat.
