My desire is to leave my barrels a minimum of 3 years as long as I have enough from jars to keep me happy. One bourbon from 2022 I won't leave that long. It was made with corn from the family farm and for Christmas I will take Dad a bottle from that barrel. He is 87 and I am afraid he will age out before the bourbon.
