Have about 13 gallons ready to be stripped. Just finished nodding my boiler. Have to do a few cleaning runs then either a slow single run or a strip. Haven't decided yet.

OK I finally had time to do cuts on the panela that I ran last weekend.

I did two runs of about 8 gal each, first run gave me about 2 liters of 90 ish abv after fores, kept the middle liter and added the heads and tails to the second 8 gals of wash. second run gave me 3 ish liters 90 after fores.

I'm keeping the first run hearts separate, little over a liter at 88 abv. Diluted a glass to 45 abv and tasting real good, should be even better with some age.

Cuts for the second - added some late heads and early tails to the hearts to give me a total of about 1.5 liters at 87 abv. Diluted to 45 abv the taste was a little spicier than the all heart batch.

My 30 Gal second panela ferment finished today, 7 day ferment instead of the previous 2 day ferment. The only things different between the two batches were more volume, panela dunder instead of molasses, and on the first run I did a vigorous stir after the first day to get a little more oxygen for the yeast.

Sounds wonderful, I have to report I have been so busy I am hoping next week I will get a chance to start a fermentation.

Checked the SG, it's a bit under 1.010 and I used a lot of dunder so hey I call it done
Got the first 15 gallons in the still and she's heating up.
One of the better ideas I've had since living here for 27 years is the outdoor access point I put up a couple months ago, full speed internet out to the edges of my property is awesome! Using the laptop out in the stillin' shed = priceless!

So far have stripped 6 gallons, filled one carboy.
Have one, maybe a little more left in the fermenter.
Need to do a 1.5 run so hopefully I don't have to do two more runs and then do my spirit run but somehow I feel like that's what's going to happen.
I think I need to mark gallons lines on this container so I have a better idea what's in there.

Hearts are very smooth and tasty, but most went in the carboy so I can do the 1.5 later.

Changed my mind on the recipe I am using. I am doing a modified Hookline rum recipe, just boiled down the panela with the molasses and added the nutrients (used tomato paste in place of DAP). Waiting for it to cool before pitching the yeast.

Stripped another run last night, got one to do tonight then what should be 12 gallons low wines will add to the little bit of wash left over for the 1.5 run.
However that may need to wait until after the 11th - I'm going to try and get it done Wednesday as that would really be a lot better than waiting.
I'm going to need to plan what I do with my time carefully but I think I can get it done.
Leaving Thursday on one trip then Sunday I'm off to go fishing for a week.
If all there was to do was run my rum then that would be fine, however there are plenty of other things that need my attention before Thursday.

Finished stripping out my low wines, got 12 gallons to run with 2 gallons wash set aside to add in.
It is what it is, sometimes you do the math and sometimes it does you.
I may get to the 1.5 run tomorrow after the better half & I get back from the movies.
Gotta treat the little lady to a show once in a while...

All done running my 30 gal batch and ended with a few gal of 88 ish abv that I'll dilute to 65 for barrel. Just tasted some of my early attempts at rum that's been in a one gal barrel for about two months - wow - ordering a 5 gal barrel from Gibs tomorrow for all the panela

Nice going OZ, how do you like the Panela rum so far?

I filled my 5 gallon Balcones barrel and have 3 gallons left that I'll save some of white and some will be feints.
It's good to have a couple barrels of rum aging and a few gallons in white to sit & mellow.
Now I have Panela rum dunder, going to have to start another batch soon!

Just found 40 lbs of blackstrap at the feed store for $18.00 including tax. Thus far that is the cheapest I have found it. 40lbs is equivalent to 3.5 gallons.

So what're you guys finding the panela-to-sugar ratio to be? Like, I've historically done 1.4lbs of sugar per gallon of water for my sugarheads, it looks like you're doing ~2lbs/gallon?

I just picked up two 10lb blocks of Jaggery last night (at $1/lb), I think I'm going to start my next UJ with it.

I used roughly 1 and 2/3 Lb per gallon in my latest batch and it turned out great
No added molasses but I did add in 15 gallons dunder that was blackstrap based and funky along with a handful of crushed oyster shells.
My rum tastes awesome from this batch, next batch my dunder will be even better because of the Panela.

Yup the Panela seems a little less sweet than processed white sugar but the flavors make up for that big time.

I ran a Pugirum last night and used the dunder to melt up some piloncillo for my next ferment. I added in about a gallon of blackstrap as the sg wasn't where I wanted. I love my refractometer, especially for rum ferments.

Just finished doing cuts on my 30 gal panela ferment.

What could you possibly build now?

I ran 3 gallons of Buccaneer Bobs feints from pot still with 18 gallons of PugiRum through 4 bubble cap plates the other night and ended up with 2 gallons at 65% after cuts. Put it all on oak and used 12 gallons of dunder to start a pit and the rest to melt up some piloncillo for a new ferment. Keeping it low at around 6.5% ABV.

40LBS of panela
5 Gal panela dunder
25 Gal water
and a little bit of RedStar yeast

I put 20lbs of jaggery, 14lbs of regular sugar, 4 gallons of AG backset and 5 lbs of ground/cooked corn into a new batch of UJ today, with a big fat US-05 starter. I had expected a higher gravity from the jaggery, or I would have bought more. Ah well, live and learn, gen 2 will get a full load of jaggery.

Yea the sugars are lower but the flavors are higher
