100% Panela and bread yeast
Pot stilled
Each strip run, tossed fores and ran to very oily tails
Ran again with several gallons of fresh wash
Kept most of the 1.5 runs, tossed fores and used really hot heads for hand cleaner, ran down until rum oils were in the last half gallon
Filled a once used 15 gallon Oola Bourbon barrel
Let it sit a year, then tried some. It was good, but tried to keep myself away from it
At two years I put in a bunch of cut up red wine staves from a Wa State Cascade wine company, all I know is it was red wine
Had a lot more of it between two and three years, now it's getting low in the barrel
Haven't gone out in a while because the shed this is in collapsed in the beg winter storm of 2018 when we got about6 feet of snow
Today I decided I'd get back there and get some
So very glad,wow this is good
Saved a bottle for posterity like I do so some time after I retire I can select from a shelf of "old" rums I've made
Here are a couple pictures, wish you could smell and taste this
