Well I did some cleaning, then some chores, then put 100# Panela in a 25 gallon pot of hot water and dissolved it all. That's about 12 gallons water and 2 bags Panela for anyone wondering.
The fermenter smelled nice and fruity just like I hoped, it's had dunder and live yogurt culture and sourdough in there for a few months and nothing bad happened.
I put the dissolved Panela in and added water to bring the whole thing up to about 55 gallons and added my probiotics.
The whole thing is still a little on the cool side, only 72F so I've got the aquarium heater going and once it reaches about 85F I'll pitch my yeast.
Should be an interesting batch!
Pitched yeast as expected a couple hours later and then checked it in the morning (Sunday).
Fizzing away and the aquarium heater & controller working properly.
I could tell right away when I entered the shed that it was working, the right smells were present.
Checked again Sunday night, and Monday.
Left it be yesterday, my oldest daughter had her first child so I was preoccupied and didn't check on my ferment.
It smells great and is working so hopes are that I'll run it this (or next) weekend.
