Firstly I’m a real novice at this and just when I think I’ve got a little understanding of using “dunder” I read these posts and I’m confused again,so my understanding was I collect what’s left in my fermenter put it in a bucket that I have cut the top out of the lid and stuck mesh too this way it will then called muck and I will add a litre of this to my spirit run ,so do I collect what’s left in the boiler and add that to my muck bucket so bloody confusing

Keep it simple you dont NEED to do dunder or muck... its just one way to do it.

Lees = yeast cake from the bottom of the fermentor aka trub
Dunder = stillage (aka backset if you're talking about whiskey)
Muck = dunder that is infected (aka dunder pit)

The big reason to use trub is to kill part of it as nutritants for your new yeast. Dunder is used for extra flavor and to drop the pH of your next batch. Muck is used if you want extra flavors by the way of esters.

In my opinion... Start simple, take 10% of your dunder from your previous batch and use that as an replacement for water in the next. It will drop your pH and help with flavor. Super easy. Don't worry about muck until you get more experience... its crazy. Just trust that it's not for the new (unless you a chemist or in the chemical industry lol) its just too much to wrap your head around until you have a better understanding. I'm not saying this disuade you, turn you off of it or be insulting.. it just a LOT. I'm trying to save the the heartache lol.

Thanks Bolverk , is dunder what is left in the boiler after a stripping run and I use it with water for my next fermentation

The contributors on these threads are brilliant and dive very deep.

I'd focus on getting good at a basic rum for a few months, then dive into the muck pits.

Check out the tried and true section and make SBBs rum, Buccaneer Bob's rum, theres a butter rum recipe on here in the rum section thats good. They are solid recipes that won't fail you. Shit, copy any recipes you find interesting to learn the subtle differences. Then when you learn what to expect, how to make cuts, how to troubleshoot a batch, then slowly start incorporating the muck aspects you've read about.

not forgetting the info in pugirum, concerning the rum oils.

and watch the percentage of dunder, there is a recipe for rum that suggests using 10l of backset in the fermentation.
too much dunder will stall the wash with a low PH.
i usually use about 4l dunder in a 25l wash (16%?)

on the spirit run, i keep it in full reflux before changing to pot still mode

muck & dunder goes in my spirit run.

plus a small 4 x barrel solera system

lot's of different tricks depending on what style you choose.
