Tannin Removal Using Gelatin
A while ago I saw a post by one of the master distillers about using gelatin to remove tannin to make a smoother spirit when you've got a lot of tannin in the wash. I tried for ages and just can't find it. Can someone tell me what's the method for getting rid of the tannins? I assume it's dissolve gelatin in the wash and collect the gunk it forms when it cools. What's the ratio of gelatin (weight) to wash (volume)? I assume we don't want a massive great jelly in a fermenter.

1/2 tsp.gelatin,, dissolve in 1/2 cup warm water add to 5 gal wash.

That's a tiny amount of gelatin for a large amount of liquid. Makes sense, though. I guess that then drops to the bottom and you siphon off the cleared wash.

I started off as a wine maker and could never get anything decent out of tea wine. However, I'm told it can be done with wine. Therefore the spirit must be worth a go.
Flaws in the logic, I'm sure.
The idea is to make a tea wine, remove the tannin and see what comes out.
Probably it'll be hideous, but why not give it a go?

worst comes to worst, just turn it into neutrals, nothing wasted.

As I dissolved the sugar and added the teabags I said to myself, "This is a waste of time".
The only thing that keeps me going is that C. J. J. Berry said that good wine could be made from tea.
