subject: ageing fruits.

hello.
i have just been to the marketplace. i live in israel. and i have found some lovely fruit (very cheap) i want to experiment with.
this is my first time doing so . so i have a few questions :
1) can appricots give alcohol ?
2) we have here a fruit called "sabres" and its VERY sweet . its the fruit of a cactus. how can i know if it gives alcohol ?
does anyone know it ? has anyone tried working with it ?
4) what about figs ? does it give good alcohol ? how do i work with it ?
3) how do i know in general if any fruit will give me alcohol ?
4) do i need to add sugar / yeast to the batch ? if so how much ? are there any general measures ?
5) what will happen if i add regular yeast (the kind that you use with cakes / bread) will it work ?
6) how long do i age something in general and how do i know when its ready ?

i am lost without some help .
and stuck with alot of fruit

thank you, knowldge people .
