been a long time since last post... Ive finally got my new pot still running well now and have been running through some wines made from many different mashes...
Now... the problem is :- they all taste the same!! I am finding it very difficult to tell them apart. could this be that I didnt take enough of the tails, or does it need aging in barrels?

I hope my grape wine turns into a nice brandy in the next few days... (it certainly burns blue!! )
All spirits need airing for at least 48 hours. All spirits with the exception of gin, vodka, white rum, and whitedog, need oaking and aging to develop flavour.
What washes have you distilled so far
Leave the lids off of your cut jars and cover them with either a coffee filters and elastic bands or a clean cloth, etc. It's hard to know what you got in those jars until after some airing. I actually air a little longer.

As well as aging and airing, etc, your cuts could make or break the character of your hooch. Little too many heads in any of the distillates will make everything taste the same, in the short run. You never know how that would change if you left them in a barrel or a bottle for 5 years etc. Same with the tails. The flavors you're looking for are somewhere in your washes, buy you have to find them. That's the trick. Lots of little jars could help you find the distinct flavors of each wash. Well, I have another glass of the spirit in front of me... and its very odd indeed! yesterday all I could taste was the alchohol. Now I can taste the subtle differences! in this glass I can really tast a fresh orange, almost trpoical fruit flavour! The other bottle "Borrowed" by a neighbour was almost sweet, like butterscotch! I fear my neighbour may enjoy too much and I will get an empty bottle in return and he may have a sore head
But I cantr believe how well its gone... will be great for Christmas!
I got a question about airing, is it also important for vodka or i can deal without it? Another thing, should i do that in the open (at room temperature) or in a fridge so less alcohol evaporate? Thanks

that is what airing is about,, letting the lower alcohols evaporate. you will loose some but hopefully it will be the part you don't want.
at what temperature/how long is up to you and your juice.
and yes they do this to vodka. some is left in open vats/towers for a month with air/o2 bubbling threw it.
