Distilling Peach wine

Post by UnclePaul »

I took some peach/fruit wine that ended up not being the best tasting and decided to run it thru my small pot still. I had about three gallons and ended up with a good quart of spirit run. There was a very distinct taste of the fruit in the run.
I took it and put it in a two quart mason jar, along with a can of peaches I soaked for a couple hours in the fridge with a heavy sugar syrup.
After it sat for a couple days, I took the peaches out and put them back in the syrup for a couple more hours and then back in the mason jar.
Finally I topped the jar off and with about a pint of water and a pint of corn whiskey I had run.
I can't believe how good it turned out. I took some to a xmas party a week or so back and it was a big hit.
It's a shame it takes so long for th peaches to ferment out as wine, and that peaches are so cotton pickin' expensive around here. I would like to be able to do a full run with my larger pot.
