How to know if it's any good?

So I finally made my pot still and did some test runs. First was plain water then water with a jug of cheap wine and then I tried going straight to an all malted barley, but I have no idea if my end product is even worth aging. I know it won't taste like Scotch/Whiskey without aging, but I sure wish I new if what I had was even worth aging. I certainly wouldn't enjoy drinking it as it is now. I still have it in 7 mason jars to separate my cuts since I wanted it to sit a couple of days before trying to blend it.
I know this is personal taste, but in general should what comes out be somewhat palatable after a couple of days or does it take much longer? I can definitely taste the difference from the heads to hearts to tails, but even the hearts aren't all that pleasant at the moment.

So far i have found with flavoured batches that what comes off is sort off drinkable if you were in a tight spot..hehe. But it doesnt taste right and wont without a couple days of airing and then some oak..Even then it at best usually tastes like the stuff at the bottle shop you wont buy cause its so low end. First flavour that comes over is oak and it stays that way for awhile. It starts getting better after a few weeks. I find my rye whiskey is actually not too bad after a month on some oak. Not top shelf by any means but it isnt bad to sit back with.

Watch you dont over oak..start with less and add more if you need to.

I personally don't care to drink much of my whitedog. You have to try to taste the subtle undertones, instead of the bite. Have had some pretty good results after 4 to 6 weeks on oak. (Very close to some of the $35.00 a fifth whiskey I've had.) Gets better the longer it goes.
