Corn Whiskey tastes like sarsaparilla

I stopped making corn whiskey after 3 batches because I moved on to other stuff and just needed some sippin' stuff while waiting for batches to age.
I have these three batches sitting there at 55% on a bare minimum of new oak (more for mellowing the flavour than colour) with nothing else added.

First and second batches are good sippin', but the last batch tastes like shit. Seriously, if you closed your eyes and put a peg on ya beak, it tastes like sarsaparilla. And I HATE SARSAPARILLA. :x
I can't drink this so it's going into the feints jar.

All three were UJ's corn mash recipe, all down to 55% on the runs. Same recipe each time. First batch had backslop from a previous trial run.

Has anyone come across this before? I really don't want to make this again for fear of producing the same rubbish.

I also made three bathes, one maize and sprouted corn. I boiled the corn probably not enough .and did not ferment long, others were crushed [cooked ]corn and sprouted corn I did not add enough sugar .but after two weeks i distilled and was surprised ,i pot stilled it and mixed all together and it tasted not tobad .i do however want to distill it again ,i wish you could taste it. seems like the wheat gave the best flavor of all previous liquor i made .

Simple potstiller. Slow, single run.
(50 litre, propane heated pot still. Coil in bucket condenser - No thermometer, No carbon)

65% is better for aging on oak, it seems to get a vanilla flavour come through with the oakiness

Well i am distilling now with my selfmade reflux still and is bit rough,and tasted a small amount - not so good. probably because im a novis.
did not follow rules that i must know by now,did not measure how much this and that,
have n nice bit of rubber ,flange gasget and pipe connecter ,which i forsee as a problem by many .?if you use ethanol on motor car engine, you remove plastic and install rubber?

should first have steeped it or left open with a coffee filter on,before i should tasted? or charred oak pieces and steep in there for weeks,before i can report on the taste
the papajas works well,by the way what is abv, percentage my highest the alcohol is 95%, you go higher with avb, sorry im a novis
