Best Yeast for High Air Temps ??

I was wondering, outside of Turbos, which yeast works best with 90F air temps, Distillers yeast or Bakers yeast

or any others ?? Thanks.

I have had good luck with superstart distillers yeast, I live in the south so warm temps. are a fact of life. MM

Thanks MM, Thats what I'm using so far.I'm on my 2nd batch of WPOSW. My first batch SG came out to 1.060

(recipe called for start SG of 1070-1080, I added sugar to increase to 1075 and I guess the yeast crapped out at 1.017

prolly should have added more yeast ? I thought maybe the heat played a role but I had to add a fair amount of suger

to bring it up to spec.............Thanks :)

EDV 493 is ideal for sugar or molasses washes at mid 30 degrees celcius. Isolated for rum washes.

Another option is to cool your wash, could use a frozen coke bottle of water or a copper cooling coil (like used for beer worts). Don't leave copper in the wash too long, it may get pitted and eaten at a tad due to lower pH.

Temperatures in Australia exceed 100 degrees often in the summer, I used bakers yeast and have not had any problems.

I prefer Distillers yeast myself in hot weather.
I use a pot still.Sometimes with a thumper

Me too, OD. I'm going to try some beer yeast for my rum during the winter just to see the result.

Simple potstiller. Slow, single run.
(50 litre, propane heated pot still. Coil in bucket condenser - No thermometer, No carbon)
