Sometimes I try things for no reason at all.
My sugar wash vodka is always better after aging for a few weeks, just mellower. I just age in glass, nothing fancy. Problem is, it is hard to keep it around for two or three weeks. So last week, just for the hell of it, I put a newly 'stilled 86 proof gallon jug in the freezer and in the morning took it out to sit in the 80F shop during the day. Did that for a week, days in the heat, nights in the freezer.
I swear after only one week the stuff is as smooth and mellow as it can get. Does this make any scientific sense? I know a lot of the bourbon makers claim temperature variation during aging is a good thing but they are aging in oak and for years and I always suspected the temp changes had more to do with opening the pores in the wood than anything else.
Anybody else do this?

is the lid air tight or one of those glass drop on lids??
