Very stuck cider ferment, HELP!

Post by homestillin »

Gentleman, Hope all is well. I have not been here in a while. Last time I was here you guys helped me with a reflux design issue and I greatly appreciate it. This time it is a ferment issue. I wanted to do a seasonal kind of thing with some cider. Pot still it into a wiskey. I followed the directions as found in the fruit section but something has gone wrong. I started with 5 gal of natural unfiltered cider (has the stuff floating around), 5 lbs sugar, 5 tsp nutrient and a 2 packs of 1118. The sugar was dissolved in 1 gal of warm cider first. then I added the other 4. I started the yeast in 1 cup 104 F water for 15 min before adding. Stirred everything nice and gentle, put on the lid then air locked it. 1 day later, not a bubble, 2 days later, not a bubble. OK, now I'm freaking. I have never had a ferment do this. Tried to restart with 2 more 1118 the same way. No go. I hope it is not the preservatives in the cider that I did notice at first. Can anybody help?
We all have a limit, finding it is the fun part.
