saccharomyces cerevisiae

Hi Guys,
I'm a little confused here (that's nothing unusual for me but ... )
My local supermarket sells "Activated Yeast" Suitable for baking and home brewing
The ingredients state one thing only - "saccharomyces cerevisiae"

I have seen references here to the above being EC 1118
I have seen references else where to the above being EC 1116

Do the latin name refer to an exact strain ? Or are there multiple EC variables under the same parent ?

Regardless I will chuck some through a wash to see what happens

That's it scientific name, genus and species, yes the exact strain. This is generally a beer yeast but I don't know what kind cuz I don't do beer. EC-1118 is S. bayanus.

Not quite. It is the species but not the strain. There are many strains of S. Cerevisiae and many other yeasts, for example: baker's yeasts, ale yeasts, and wine yeasts can all be different strains of S. Cerevisiae with different properties. Same species though.

There are of course different species of yeast used in fermentation. True that EC 1118 is S. Bayanus, but most yeasts are strains of S. Cerevisiae.

Knowing species alone doesn't tell you everything about the yeast.
