Heating Things Up

This may seem like a stupid question, But I need to know. After the wash is put into the still, how quickly should the wash be brought to temperature? Should I let it come up slowly or should I apply the heat and then try to turn it down. If I let it come up slowly, how long would it take to process a 5-6 gallon batch?
