Don't know about freezin' malt... But wouldn't you dry it in place than freeze it? Never malted grain myself, but what I buy is dried.
I'm french speaking!

Boiler : 50 L (13 gal) beer keg, gas heated.
Reflux : 104 cm (41 inches) column 54 mm (2 inches) diameter withh SS scrubbers packing.
Potstill : 40 cm (15 inches) column 54 mm (2 inches) diameter without packing.

When I malted my barley I placed it into the dehydrator and dried it. I stored it in some glass jars for a few days then ground it. After grinding I placed it back into the glass jars until I was ready to use it a week later.
Freezing should be okay for a while.

I'd suggest to just dry it and grind it just before you use it. Should stay fresh longer that way.
