have a question for one of the mentors. after i ran my last mash, i wanted to temper some of my clear rather than making apple pie. starting product was around 100 proof (tails), i mixed 1 quart of shine with 1 pint of water bringing it down to 80 proof (hydrometer tested). within an hour or so, the tempered shine started to turn cloudy. i tried to chill the shine in the fridge thinking that it may help some and it made it worse, so i took it out and uncapped it hoping that may clear it up and that didnt help. that shine was used for apple pie since it looked so shitty..lol... i tried it again with the same starting proof and a different type water and got the same results. first time i used distilled water and the second time i used bottled drinking water. any ideas as to what the hell im doing wrong or how to keep my tempered shine from turning cloudy? any help would be greatly appreciated.

Have you tried adding the spirits to the water, slowly, rather than water into spirits...???

i was just experimenting with it. what i started with was what i deemed as tails since it was my last quart from my run. i was afraid to start with using my heart to experiment with..lol.. i have a 5 gallon pot still and usually cut 1 pint as head, 2 quarts as heart with the first quart being the best and a 1 quart as tails for a total of 3 1/2 quarts of finished product. i usually use the tails to make a mixed drink out of (apple pie) and keep my heart and head back for myself, but drinking on 130-140 proof is a bit much but possible to do. both times i have tried to temper has been with the tails and even though some people dont like the taste, i do because you get a true grain flavor out of it. i have added water to the spirit and done it quickly as in dumped it together. i will try it with my heart cut tomorrow and add the spirit to the water and do it slowly this time.
