just a rough calculation for barrel aging emulation on glass or ss using the usual oak products (dominoes/chunks/staves):
if a standard 200l bourbon barrell weighs 50kg (wood only, no rings) and if the bourbon permeates only the inner 15-20% of the staves, 37-50g oak is needed per liter.
nb, this is more than what is usually recommended by the hobbyist community.
still, using weight rather than surface area is easy, gives precise control and more predictable results imo. any thoughts?

I'm not sure about your 15-20%, where'd you get that figure?

I've taken barrels apart and measured penetration and generally it's only around 2-3mm.

i just looked at google images. what would you say 2-3mm is proportionally to total? 10%?

That would be entirely dependent on the barrel staves. The 2 1/2 gallon barrel I took apart has staves about 10mm so you're looking at 20-30%, but I have no idea how thick the staves are on a 50 gal barrel, probably more like 15-18mm, just guessing.

stave thickness of std bourbon barrel is 1 inch. with 3mm penetration it is 7.5g of oak /l. that's more in the ballpark.
