Ok, so before I did my research, I went and got an Essencia Super Express. This is the twin 1500W unit, to make a whopping 3000W of heating.

I'm going to start by doing a few stripping runs of some bad wine that I've made over the years. Might as well find some use for it. So my question: In the instructions, they state that during a distillation run, to make sure the flow water remains at 40 to 45C and that this temp is the most important temp. However, when I get the outflow temp to 40C, my column temp is up around 87 to 90C.

I've been increasing the flow to keep the column temp between 77 and 80, however, the outflow temp is around 30C instead. So should I pay more attention to column temp or water outflow temp?
