Salivary Amylase--corn whiskey
I have been working all day on this. Using salivary amylase to break down the starches of 7lbs of cracked corn. I chew, chew, chew for 3minutes and spit the mouthful of mash into my fermenter. It has taken me all day long to produce about 3.5 gallons of mash (3 more hours for a full 5 gallons). I would guess it will finish with the potential of a 6%ABV. With two more buckets lined up, it will take me the better part of the week. I plan to pitch bakers yeast and run this out to 7 generations (reusing the backset etc.). Wish me luck...

Normally i would offer my services as a taste tester but I think I might have pretend that I am completely booked up

I'm not sure if I'm impressed at your dedication or.disgusted at the amount of time you have on your hands lol. Either way I will be interested to.see the results

HAHAHA, best responses ever! This of course is a joke (start of first gen UJSSM). But, there are indigenous tribes that use this technique communally (everyone chews and spits) until they have enough to make their beer; they don't even distill -- just ferment and enjoy.
I tell you what, if someone has the gumption to try it...I may give it a swig (once distilled a few times).

I wouldn't shy away from trying something like this that was distilled. But beer, no way!

You were joking? I was think of ways to help you speed up the process. Like you could rent a couple of st bernards and dangle some pizza and collect dog drool. Or invite some friends over to chew some tabaco.

LOL! I have 3 dogs...The only problem...do dogs have salivary amylase? Doesn't matter, they would still love to help.
