Hi Everyone.
I am new to the forum and a newbie at distilling and have a question for the experts on here. I had most of my column distiller made and mixed up a small recipe of mash for my first attempt. Problem is , I was unable to procure a couple of the parts I need locally so have had to order them. Will my mash keep for 2 extra weeks or should I throw it away and try again. I only made up a 20 quart batch so its not the end of the world to try again. I live in an area that is very cold (Canada) so could I freeze it for future use.

keep it sealed and is should be just fine. no need to freeze. if you want you can keep it cold but you should be just fine if it stays sealed. but to be honest if this is your first run through your new build it wont matter because it should be a cleaning run anyway and shouldn't even be drank what so ever.

At first I just assumed that you were talking about storing after fermentation, which is just fine. I have done this many times and never had a problem. Then it dawned on me you might be talking about something that had not been fermented yet.
Once I only had enough grain to make 2 gallons of mash. I figured I'd mash it and put it in the fridge and buy more grain and finish the other half the next day. It was fine the first 2 days, the third day I got my grain and mashed it. I went to get the mash from the fridge and it had blown the top off both of the jugs. What a mess, and the smell just about killed me.
So if your mash hasn't been fermented yet be careful. You may want make sure gas can escape if it starts fermenting on its own.
