Has anybody any experience aging spirits with Oregon White Oak? From research it appears that it is a 'white oak' so should work. It has more tannins then other American Oaks (like a french oak) and may or may not be suitable for making barrels because the grain is not as tight.
I have access to lots of this type of oak. It seems that heart wood is the most desirable...does log or tree girth matter when selecting your chunk? Has anybody used it small scale for aging spirits (making and roasting/charring splints) ? If so, how much would you recommend per say a gallon?
