How important is aging

After I have distilled my spirit using a super reflux still how long do I age it before using

what happens in aging , how does the chemical composition change

If I am making say , Baileys , does it make a difference if I use aged spirit , or age it after I have made up my Baileys

As I read your question, you are making a neutral spirit, right?

If you are making ethanol, it does not reqire ageing. Make your vodka,gin and liqueurs and enjoy immediately.

Like they said. If you're making the Baileys Irish Creme from neutral sprit and flavouring, then aging will do nothing.

On the other hand, if you are making Irish Creme from "scratch" by making it with cream and Irish whiskey, then aging will make a difference.

I think aging with open air will improve things - if you can combat those angels - wanna borrow a carpet snake? :D


Aging on oak sticks or in an oak cask works wonders for whisky or rum flavourings - but is far short of the real thing.
