Flavor/smell change xuring ageing
Had initially about three gallons of UJ on toasted chips and was trying how ageing process goes regularly
after 6 weeks noticed that taste and smell changed. I think I over did the process because started noticing bitter taste instead of sweet taste before. How long you usually keep your stuff on oak before putting it in bottles?

Careful the research police may bust you.
Keep trying it and when you find you like it remove it(keep notes for future reference). Don't be like Icarus. It turns overdone quick. I used to think there was some magic number but it is a matrix of liquor strength, type of oak, char/toast, length of time, humidity, temperature, and the worst one of all your taste buds. I experimented with a large batch and split it up and used different sizes/chars of oak sticks to find what I liked.
