Re: Aging Barrels Discovery........

I ordered (3) five litre medium toast oak barrels from Oak Barrels Ltd a couple of months ago. I followed the instructions for "breaking it in" with water and filled one with the smoothest hearts I had. These hearts were accumulated over several runs over a couple of months. They had absolutely no burn and no bite at all. Just smooth. I waited a few weeks, testing it regularly. After a while the smoothness went away. It began to taste like bourbon but it started picking up burn and bite. I removed about a pint from the barrel and topped it off with tails from a previous run. In a week or so I sampled it again and, low and behold, now it's smooth as a baby's butt.....no burn and no bite! Just wanted to pass that along.
