Sugar needed?

Post by thereactorleak »

Looking to make some peach shine- I've read the strawberry panty dropper guide to extracting the flavoring syrup from strawberries, and I would imagine this would apply to any fruit really. Is sugar needed to extract the syrup from the fruit you are trying to get the flavor from? Or can I just simply soak some sliced peaches in the shine and let the flavor leach out?

I've tried searching for an answer to this, if there is already one posted sorry for the repeat, drop a link to the thread plz.

Also, anyone have an peach pie recipe laying around.

All fruits have natural sugar thus can be fermenting. Adding sugar raises the abv of the wash its a decision you need to make as some prefer not adding ( I don't with the cider I press to make brandy).

Yes you can pour shine over fruit and let it work.
Shake it daily seems to work best.

We do a Cranberry this way.

Divide a 1/2 gallon of Ocean Spray Cranberry sauce
evenly in to 4 1/2 gallon jars - fill with neutral leaving
about 1.5" of head space. Shake daily for 2 or 3 months.

Very close to the cranberry liquir that Clear Creek Distillers makes
at about 1/10 of the price. We do not add sugar to this.

Have done the same thing with Sweet Feed whiskey oaked for 3 months
and then poured over slightly mashed Granny Smith apples. - Wifey loves it

so many variations, if you want more of a "pie" taste roast the fruit. for more of a "fruit" taste use as is.id sagest trying diferant ways to see what you like.yes you can put fruit in jar and add alcohol.leave for extended time.maybe make several jars of diferant "roast" and some plain fruit.
leave it for over a month and see .

Ok here's the plan, 4 small sample jars (pint size each probably.)

Jar 1 - light sugar / peach / shine - let sit
Jar 2 - peaches / shine - let sit
Jar 3 - half an half oven toasted and regular peach slices / shine let sit
Jar 4- light sugar and same as jar 3

I will report back with ratios and results for everyone, thanks for your input. Hopefully I'll have some methods for every peach shine desire :)
