After a bit of reading I wanted to check out amylase. I ended up purchasing some in liquid form. What I ended up getting was called "Diastase of Malt". As a habit I checked out the MSDS sheet which stated that Diastase of Malt was poison. Do I really want to put this in the wort?

I would think that yes if you drank it, it would be BAD. Would wreak havoc with your intestinal track, as in serious gas issues. Converting a lot of stuff in there to sugars.

But you use it to convert starch to sugars in a mash, then fermented and distilled. It likely wouldn't carry over in the distillation or else we would not use it, probably most likely would be mostly used up before the fermentation.

Didn't really see where it said that it is poison. Just gave some generic accidental ingestion, eyes, inhalation, or contact instructions. Have seen the same one on a tube of toothpaste.

Just my thoughts, if in doubt of course don't use it. Some of the chemist and more experienced people on here may have a much better answer.

amylase is a enzyme that nocks off sugars from a starch molecule. So if your gunna distill it No big deal youll denature it. Even if ya eat it in small amount your stomach acids outta take care of it.[/img]

At what temperature does the malt enzyme deactivate?


Now......at what temperture does your wash boil at?
